Double Pork Fried Rice

Pork fried rice with double the pork! Using leftover Asian style ribs and adding bacon this will please any pork lover!

Ingredients
  

Using leftover Asian style ribs

  • 2 cups pre-cooked jasmine fried rice you can also use white
  • 6 slices bacon
  • 2 eggs
  • 1 onion diced
  • 1 pepper diced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 2 garlic cloves minced
  • 1 tsp ginger paste
  • 1 tsp sesame oil
  • 1 tsp chili oil optional
  • 1 tsp bacon fat optional
  • 1 tbsp unsalted butter
  • 1/4 cup leftover Asian style rib sauce
  • 4 leftover ribs or more
  • salt and pepper to taste

Not Using Asian Style Ribs

  • 4 tender cooked leftover ribs optional, vegan or different meat
  • 2 tsp sugar
  • 1/3 cup low sodium soy sauce
  • 1 1/2 tbsp rice wine
  • 1 tbsp prepared Korean stir fry sauce
  • 1 tbsp hoisin sauce
  • 1 tsp oyster sauce optional

Instructions
 

  • In a small pan cook the bacon until fat melts, set aside to cool. Use same pan from the bacon & reserve a tsp of bacon fat then add pam to the pan and scramble the egg, set to the side. Cut up bacon and set to the side.
  • Heat a large pan on medium-high heat with oils then add vegetables cooking (excluding garlic and ginger paste) until onions are translucent about 5 mins.
  • Add garlic and ginger paste cook until fragrant being careful not to burn the garlic. About 30 seconds to a min.
  • Add rice to the pan, add butter or you can add more sesame oil instead. De-clump rice; once mostly broken up add in your rib sauce and meat, cook until hot. If you are not using Asian style ribs and sauce add all seasoning ingredients excluding bacon & egg.
  • Salt and pepper to taste, cook until everything is hot, taste before adding bacon & egg. If you are not using the Asian style sauce and ribs you may need a bit more sugar.
  • Once the rice tastes to your liking add egg & bacon. Toss rice together until bacon & eggs are incorporated and hot, serve immediately.

Notes

Make sure if you ARE following the recipe using the Asian style rib sauce and meat you skip the other ingredients that are listed as "Not Using Asian Style Ribs" you won't need those extra ingredients as the sauce adds plenty of flavor.
Make sure if you are NOT using the Asian style ribs that you are still using all the ingredients except the Asian style rib sauce and meat. You are basically using all the ingredients that are listed above the ingredient "leftover Asian style rib sauce".
Save leftovers for 1 day. If you are using ribs from the day prior then keep leftovers for up to 2 days.
