Instant Pot Mac and Cheese

Easy Instant Pot Mac and Cheese recipe made in one pot easy clean up!

Ingredients
  

  • 1 lb Uncooked Rotini
  • 4 cups Vegtable Stock
  • 1 cup Water
  • 3/4 tsp Salt
  • 1/8 tsp Garlic powder
  • 1 tsp Dijon Mustard
  • 1/8 tsp Paprika
  • 2 tbsp Butter
  • 2 tsp Gratted parmesan
  • 2 1/4 cups Shredded sargento sharpe cheddar cheese
  • 2 oz Cream cheese
  • 1/4-1/2 cup Milk
  • Salt & peper to taste
  • Pankco bread crumb (optional)
  • Extra Paprika (optional)

Instructions
 

  • Add the Rotini (or other pasta) into the inner pot with the vegetable stock, water, ¾ tsp salt, garlic powder, mustard, paprika and butter. Give it all a nice stir.
  • Once you’ve stirred cover the IP and cook it for 4 minutes on high pressure. If you don’t get to it right away no biggie it will automatically go on keep warm but once the 4 minutes of cooking is up do a quick release but make sure you use a kitchen towel or a glove as the starch may squirt everywhere
  • Next you want to stir in the cheese including the cream cheese and parmesan and stir in the milk. Now you can adjust the milk to what you’d like but I recommend sticking between a half and a quarter cup. Season with salt and pepper and serve or you can do the extra step below.
  • Extra step: put your oven on broil and prepare a large baking dish with either PAM spray or butter. Take the Mac and cheese add it to the baking dish add extra cheese if you’d like then add your desired amount of panko bread crumb sprinkle a little extra paprika and broil for a few minutes, I did about 5. Enjoy!

Notes

You can use any shape pasta you please I just like the rotini shape, I have not tested with gluten-free, wheat or vegetable pasta.
Add in what you like I recommend bacon but there are many different things you can add, protein or vegetable.
I like to use vegetable stock as it gives a nice flavor but if you are adding in say cooked chicken use chicken stock.
For the cheese you can either buy sargento shredded or shred it your self. Choose any cheese you please or maybe American instead of using all cheddar. Mix it up why not!
You can make it ahead if you want to serve it later on and broil it when ready to eat BUT if you are doing this I would definitely add a little extra milk.
