Who has a soft spot for rice pudding? I do!! I do!! When I was growing up my grandmother or as we call her gram or grandma Sadie used to make rice pudding ALL the time. Words cannot explain how amazing grams rice pudding was. Unfortunately, as she has aged she doesn’t remember how to make it. So much so she swears she adds a tub of ice-cream to it and we all know this isn’t grams delicious rice pudding!
Did we ever find her recipe? Nope, if you know anything about little old Italian ladies you know we Italians sort of just let our ancestors speak to us to help create those authentic delicious Italian meals. Also, gram wasn’t a baker, like really seriously not a baker. In my entire life, I have never seen her bake a blessed thing. I guess that is also why she didn’t write it down because she cooked a lot and it is more like cooking than baking. Back to the yummy homemade rice pudding, grams rice pudding, unfortunately, was never recreated. So now you know why I love rice pudding, but it isn’t just any old recipe, it has to be amazing!
How did you come up with this recipe?
After many failed attempts at trying to recreate grams rice pudding, my mom came across a really great stovetop version for cinnamon rice pudding. Let’s just say it is a close call between the recipe my mom uses and grams. I absolutely loved my mom’s, it is so rich and creamy and perfectly cinnamon with hints of vanilla and almond! Anyway, I tried it a few times and although it came out good I always was frustrated making it. I mean who wants to stand over the stove for 70 mins sometimes longer. That is why I developed instant pot cinnamon rice pudding.
I took all the best parts of the recipe my mom found and did some research on how to convert measurements to create this perfect cinnamon rice pudding. You really can’t go wrong when you can have this pudding in half the time and only a little hands-on time!

Yes, I did not follow the recipe instructions at all it is a completely different technique making the cinnamon rice pudding in the instant pot. Also, the measurements are very different since it is being cooked in less time I needed to reduce the ingredients from my mom’s recipe quite a bit. I also added a lot more cinnamon. If you aren’t a huge fan of cinnamon then you can use less.
Do you cook the rice in the instant pot with milk?
Not at first or it will curdle, you will add the milk to the pot later. You cook the rice with water in the instant pot then you can add the milk and use the sauté function for a little while to let the rice cook with the milk and cream so it becomes rich and creamy! There is a little hands-on time but I promise it isn’t much!
Are there eggs in your recipe?
No! Every recipe I have had never had eggs in it and it was so delicious so I stick with using cream and milk to get the correct texture and flavor.
Do I need to use vanilla and almond extracts?
You don’t need to but I think it adds a lot of flavors. Especially the addition of almond extract mixing with the vanilla and cinnamon, honestly it is so delicious so if you don’t have an allergy please don’t skip it!
Can cinnamon rice pudding be made vegan?
I have not tried it but you are more than welcome to experiment. I would recommend replacing the milk with almond and the cream with silk’s heavy cream alternative.
Is instant pot cinnamon rice pudding gluten free?
Yes, rice is naturally gluten free, so enjoy!
What kind of rice should I use?
I used Arborio but basmati and jasmine will also work great in cinnamon rice pudding!
Instant Pot Cinnamon Rice Pudding
Equipment
- Instant Pot, or pressure cooker
Ingredients
- 1 cup Arborio rice or basmati, jasmine
- 1 1/2 cups water
- 1 cup 2% milk or almond milk (vegan)
- 3/4 cup heavy cream or silk heavy cream alternative (vegan)
- 1 1/2 tsp ground cinnamon
- 3/4 tsp vanilla extract
- 3/4 tsp almond extract
- 1/8 tsp salt
- 1/2 cup granulated sugar
Instructions
- To the inner pot of your pressure cooker add rice and water, secure the lid and make sure the valve is set in the sealing position.
- Select pressure cook or manual and cook on high pressure for 4 mins. The pot should take about 8 mins to come to pressure before the cooking cycle starts possibly longer if you have an 8 qt IP.
- When the cooking cycle is complete allow the pot to come to pressure manually waiting 10 mins. The pressure cooker should read LO:10 and at that point, you can manually Vent your IP. (be careful not to burn yourself.)
- Once the valve drops remove the lid hit cancel and stir in remaining ingredients then press sauté function stirring until sugar is dissolved.
- The mixture will look liquidity watching the mixture occasionally stir for 8 mins or until its thickened turn instant pot off. The pudding should be bubbling remove the inner pot from IP and continue stirring another 2 mins, it will get thicker as it cools. Allow to cool and serve warm or refrigerate.
