It may not be October yet but I couldn’t wait to share this fall recipe with you! My family and I actually start making Pumpkin bread in august! We honestly can never wait until October to make it and to enjoy this delicious homemade pumpkin bread!
Yes I know there are plenty of pumpkin bread recipes out there but this one is seriously the best! Don’t even think about Starbucks pumpkin bread because it really has absolutely nothing on this one! No joke once you taste pumpkin bread from scratch you will not be looking for another pumpkin bread recipe again!
What’s the story with this pumpkin bread?
Before my sister and I were born my parents would travel around the northeast to different bed and breakfasts and inns. Along the way, they stayed at Koby Inn, a place in New Hampshire (or at least this is how their memory serves them). My mom and dad couldn’t tell me much but they will never forget the food. If one thing, in particular, came to their mind it was the pumpkin bread. The first taste of that pumpkin bread my mom knew it was special and she absolutely needed the recipe. They called over the waitress and asked what was in the bread because it was amazing, she replied molasses. My mom knew she couldn’t leave without this recipe so they asked the waitress if she could get the recipe from the kitchen and they happily supplied it, man are we glad she got this delicious fall recipe!
How old is this recipe?
I am not 100% sure how old it is but most definitely over 30 years old! My mom has been making it for that long. My mom, sister, and I make it every year from the end of summer throughout the autumn season.
Have you changed anything in the recipe?
Nope, this recipe is just too good to mess with. I wouldn’t dream of changing a thing! Pumpkin bread from scratch is one of those recipes that you want to share but it’s just so good that after you’ve shared it you wished that you kept it all for yourself!
How much does this recipe make?
Quite a bit actually! Be prepared to have plenty of batter to make multiple loaves or muffins. We use this recipe to bake up all different sized loaves or muffins. I like to make a mixture of one large 9×5 loaf and muffins or one large loaf and four mini loaves! You can make two large loaves with this or if you want all muffins it makes seventy-two muffins! You could also make three medium loaves if that suits your needs better.
Is this just for breakfast?
It can be but I eat it any time of day, breakfast, lunch, snack, or dessert! This pumpkin bread also goes really really well with my Fall Inspired Triple Nut butter! Not that the pumpkin bread needs anything else but I was curious, so I tried them together and WOW!
Can I make muffins and add frosting?
You sure can, this is perfectly sweet without icing but if you did want to make it more like a cupcake and add something on top I would recommend a cream cheese frosting!
Have you tried making this vegan/dairy-free/ or Gluten-free?
No, I have not, but that doesn’t mean you cannot try it. If I were to dabble in a vegan or df version you only need to replace the eggs. I would recommend replacing the eggs with flax eggs. For this recipe to replace three eggs thoroughly mix three-tablespoon ground flaxseed meal with nine tablespoons of water, then let it sit in the fridge for fifteen minutes to set up and thicken. If you need to try a gluten-free version I would recommend using bobs red mill gluten-free baking flour in a one to one ratio. As you can see this recipe should not be hard to convert for your dietary needs.
Do I need to add molasses?
YES! If you leave that out you will no longer have a special pumpkin bread!
Can I just use pumpkin pie spice instead of the spices in this recipe?
You could but it may not taste as amazing. I have always stuck to the recipe and pumpkin pie spice has different spices in it than this pumpkin bread from scratch calls for. There are ginger and allspice in pumpkin pie spice but this recipe does not call for either of those.
Can I use pumpkin pie filling?
No, use 100 % pure pumpkin for this recipe, I haven’t used fresh but I am confident that it will work just fine.
Is this recipe easy?
YES, and I am not just saying that. The worst part of this recipe is waiting for it to bake so you can finally eat it. When the house fills with the delicious fall spices, molasses and pumpkin you won’t be able to help yourself! It is totally worth the wait though!!
Pumpkin Bread From Scratch
Equipment
- Stand Mixer
- loaf pans
Ingredients
- 3 cups all-purpose flour Bobs Red Mill GF Baking Flour
- ½ tsp baking powder
- 1 tsp baking soda
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 1/2 tsp salt
- 3 cups granulated white sugar
- 3/4 cup vegetable oil
- 1/2 cup molasses
- 3 eggs or 3 tbsp ground flaxseed meal & 9 tbsp of water
- 1 15oz can 100% pure pumpkin I like Libby's
Instructions
- Preheat oven to 350 and line loaf tins or muffin tins with liners or spray with pam for baking, set to the side
- In medium-sized bowl mix flour, baking powder, baking soda, nutmeg, cinnamon, cloves, and salt, set to the side.
- If using flax egg substitute, mix the flax and water thoroughly then refrigerate for 15 mins before using.
- In a stand mixer fitted with a paddle attachment beat sugar, oil, and eggs (or flax eggs) thoroughly, add pumpkin mix well, add molasses mix well.
- Gradually blend in dry ingredients. If making muffins fill three 24 cup muffin pan and bake for 20- 25 min. If making loaves fill 2 loaf pans and bake for an hour and 15 mins or until a toothpick comes out clean.

Pumpkin spice is a bit different. Most recipes call for ginger (within the pumpkin spice) this recipe doesn’t have the same spices so you may like it!

I don’t remember having a pumpkin bread but I love eating pumpkin roll maybe it’s a great idea to try making it this year. I honestly drooling looking at your photos. It looks so tasty and delicious!
Pumpkin roll is absolutely delicious! I make that too but this is a little less of a dessert though it can be eaten as dessert because it is sweet enough. It is quite delicious and if you like pumpkin roll I don’t see why you wouldn’t enjoy this!
