This hazelnut butter is super easy and delicious! If you know me you know I absolutely love white chocolate! Yes yes, I know white chocolate is bad for you and it isn’t really chocolate but what is life if you can’t indulge once in a while? You are slowly going to see I use white chocolate in a good amount of my sweet recipes, I think it just brings a whole new flavor to certain baked goods!
What made me create white chocolate hazelnut butter spread?
My love for white chocolate started a long time ago. I used to go into Godiva with my family as a kid and that place is what has sparked the interest in white chocolate with hazelnuts. Godiva used to make this really delicious chocolate called a Cascade. If you have ever heard of this you would totally understand my obsession. The cascade chocolate had a hazelnut praline no chocolate inside so just think about that delicious hazelnut flavor with a sweetness and a bit of crunch. So what made this so special was that it was covered in rich and creamy white chocolate! The combo of the white chocolate and the hazelnut praline is unbeatable to me, I seriously could eat that particular chocolate all the time. Unfortunately for me just a few short years later they discontinued it and never made anything else quite like it.
As I have gotten older I have learned to make all different things from scratch but that chocolate always comes to mind when I think of Godiva or anything with hazelnuts. A couple of months ago I was curious and tried making my own hazelnut butter I added White chocolate but I had to keep tweaking my ingredients to get the right consistency and flavor. Just a few days ago I did it! I achieved that amazing buttery texture with delicious white chocolate inside! The actual White Chocolate Hazelnut Butter doesn’t taste like the Cascade but that’s another recipe in the future! The butter has a Hazelnutty flavor with a little bit of white chocolate! You can’t go wrong with this tasty nut butter spread. White Chocolate Hazelnut butter is perfect to put on toast, oatmeal, maybe just a spoon, or if you want to use it in recipes! Basically any way you would use Nutella or peanut butter you can use WHite Chocolate Hazlenut butter the same way!
Ingredients
Obviously you will need hazelnuts for this recipe. You can either buy them ready to go unsalted and pre-roasted or you can do the work your self following my Roasted Hazelnuts post.
Salt is in here just to amp up the flavor a bit but if you have sodium concerns leave it out.
Hazlenut oil or any nut oil is essential this helps add a more intense hazelnut nut or nutty flavor so you definitely do not want to skip out on the nut oil. If you don’t have hazelnut oil you can use any other nut oil or even sememe oil in place.
White chocolate is essential obviously you need it to make that delightful white chocolate taste.
The vanilla extract I love to have it in there but that is optional you don’t need it but I think it helps flavor it more.
Procedure
Whipping up this white chocolate hazelnut butter spread is super simple. You just grab your blender or food processer, add your hazelnuts and salt (if using) blend on low for 30 seconds to 1 min. Once crumbly grab a rubber or silicone spatula and scrape the nuts from the side. Blend again on high for about a min then scrape down the sides again adding your melted white chocolate, nut oil, and vanilla extract (if using). Put the top back on blend again on high until it looks creamy, it may look a little gritty this is normal. You can continue to blend to your liking. When you have your White chocolate hazelnut butter to your liking just put it in an alright container in the fridge. Keep for 3 weeks.
As you can see from the photos I have my white chocolate hazelnut butter spread in a plastic jar. I love the way it looks in a plastic jar so if you want to up-cycle a little then you can do the same. When you are done with a nut butter spread jar, coconut oil jar, Biscoff cookie butter jar, I take the jar and peel the labels off then grab some Goo Gone and scrub off excess residue. Then I wash the in and outside thoroughly and fill with whatever I want.
White Chocolate Hazelnut Butter Spread
Equipment
- Blender or food processor
Ingredients
- 14 oz Roasted unsalted hazelnuts
- 1/8 tsp Salt optional
- 1/2 tbsp Hazlenut oil or another nut oil
- 4 oz White chocolate bar
- 1 tsp Vanilla extract optional
Instructions
- Roughly chop or break apart your white chocolate into a heatproof bowl. Microwave on high for 30 seconds mix then another 30 seconds mix and continue at 15-second intervals mixing after each one. When your white chocolate is no longer clumpy and smooth it is done being melted, set aside.
- In your blender or food processor add your hazelnuts and salt (if using) secure the top and blend on low for 30 seconds to 1 min. Once crumbly grab a rubber or silicone spatula and scrape the nuts from the side. Secure your top and blend again on high for about a min then scrape down the sides again
- Add your melted white chocolate, nut oil, and vanilla extract (if using). Put the top back on blend again on high until it looks creamy, it may look a little gritty this is normal. You can continue to blend to your liking.
- Once you have your White chocolate hazelnut butter to your liking just put it in an alright container in the fridge. Keep for 3 weeks.

Yes this recipe would work subbing in any other nut, depending on the nut you choose you may need more or less oil. I would start with a little drzzle and after blending a few times if still very gritty then add another small drizzle. Better to start with less than have too much oil.

Yes, that would be fine. The texture may solidify a tiny bit more but it will work.
